This email is a bit slow in coming, but I wanted to let you know that we had a great time cooking your recipes on mothers day.
We did the Kleftiko, Chicken Giros, greek salad, Tzatziki, Pork Souvlaki , potatoes, and octopus. The lamb could have been done for a bit longer, but was still really tasty. I also made Loukoumathes for desert. YUMMMYYYYY!!! Paris says he needs a special mention because he cooked the octopus!! We did do the chicken on my gas spit I have to admit, but I have since bought a Cyprus grill BBQ off the internet and have done it on the coals as well. I got a bit busy with people here and only took the one photo. Bummer!

I am still living in the wonderful memory of my son's comment about your pasta dish. He is a man of few words, but really made sure I had eye contact with him when he said slowly and very convincingly: "Mum.......That was awsome."
The course you gave us was not only incredibly informative, it was fun because you made it so. You are so passionate about food that even the non cooks of the group were enthusiastic and rushed home to try the dishes.
We were also very lucky to have you show us some of your favourite foody haunts. I have been back to the shop with roasting pans etc and been back to the Mediterranean Wholesaler and am planning another trip today but will include the nut shop and another called NSM where I can apparently get bulk vinegar! - All very exciting.

Niki brings her love of food and people to her classes. She not only creates a very warm and welcoming environment but has a great skill of making all participants relax and want to get involved. She offers great cultural insights with each dish on how they came to be and then offers suggestions in alternative ingredients. I highly recommend her classes to anyone who is wanting a true cooking experience not just a how to cook class!

Niki presented a very informative introduction to every day Greek food as eaten here in Australia. All we had to do was grate and chop under her watchful eye and the end result was a fabulous lunch! The stuffed vegetables, burghul pilau, prawn saganaki and ricotta cigars are set to become regular dishes in my repertoire!
