Dolmades - stuffed vine leaves
Domaldes - stuffed vine leaves.
These little morsels are a great as a side dish or main meal. They are vegan so you can easily cater to your vegetarian/vegan family and friends. They can be made a day ahead and cooked the following day. If you can't get your hands on vine leaves you can use silverbeet leaves.
Ingredients:
approx 30-40 vine leaves or about 15-20 silverbeet leaves
1 large onion finely diced
1 large carrot grated
1 large red capsicum finely chopped
1 ½ cups finely chopped white cabbage
½ bunch of parsley finely chopped
salt/pepper
¼ cup olive oil
1 tin tomatoes
1 tablespoon dry mint
1 tablespoon dry oregano
2 heaped tablespoons tomato paste diluted in 1 cup water
