These delightful coffee biscuit is dead easy, vegan and delicious.
Ingredients:
1.250kg Self Raising flour (give or take)
1 cup vegetable oil (I use light olive oil)
2 cups freshly squeezed orange juice
1 cup white sugar
sesame seeds
Method:
In a stand mixer, using the whisk attachment (you can also do this by hand, but I find it quicker using a mixer), add the oil, orange jjuice and sugar together. Whisk well till sugar dissolves.
Change your attachment to the dough hook, and slowly start adding your flour to the sugar mix. This can take 5-6 minutes after you've added all your flour for the mixture to come together. You may need to make a slight adjustment to the flour amount. What you are looking for once its done, is a very soft dough that doesn't stick to your hands. If its sticky add a couple of tablespoons of flour at a time till you get the desired result. Once it does come together, pour onto a floured surface and knead the dough (for about a minute)to bring it together. Divide dough into 5 equal portions.
Roll each piece/portion into a sausage roll shape, thickness roughly the size of a golf ball, and roll it into the sesame seeds making sure its covered all around.
Make deep diagonal cuts into each roll approximately 1cm apart, but don't cut all the way through. Bake them in a preheated oven on 170C till light golden brown.
Remove from oven and allow to cool down so that you can handle them without burning your hands. Using a serrated knife, carefully cut them through where you scored them. Lay them flat back in the tray and re-bake in a low oven(100C), till they turn a deep golden brown colour. Allow to completely cool down and store them in an airtight container.
