Another sub heading to the Everyday Greek. As with vegetarian food, Legumes are a big part of our diet.
Not only are they eaten purely for their nutritional value, but also a staple when fasting. Again, part of the Mediterranean Diet, legumes are considered the meaty part of the vegetarian repertoire.
In this class we will be making dishes such as fakes (pronounced fa-kkes, lentils), home made fasolada (bean casserole with tuna salad), fava beans, broad beans with artichokes (again when in season), pizzeli (pea casserole).
